This is mainly because of the calcium in dairy. Calcium binds with oxalates to form a compound that your body can't absorb in your gut. Instead, it gets removed from your body.
This binding is important for stopping kidney stones made of calcium oxalate from forming, which are a common health problem linked to eating too many oxalates (Hossain et al., 2003).
